Sometimes I just want a quick, delicious dessert. And this fast peaches and cream recipe is just that. Sweet, salty, and good enough to serve guests, you’ll want to add this your lineup this week!
Serves 2 | vegetarian | less than 10 minutes
- 1 ripe peach, halved and pitted
- 2 tbsp mascarpone cream
- 1/2 tbsp honey
- 1/8 tsp sea salt
- 1/2 tbsp butter
- 1/2 tsp brown sugar
- Chopped mint and sea salt for topping
Mix the mascarpone, honey and sea salt in a small bowl and set aside. In a small non-stick pan, heat the butter and sugar over medium heat. Add the peaches face down and cook for about 3 minutes until browned on the edges. Remove and drizzle with remaining butter and sugar mixture to coat the sides. Let cool for about a minute, then scoop 1 tbsp mascarpone mixture into the center. Top with sea salt and mint. Serve immediately.
