Summer Orzo Salad

This salad is so easy and filled with fresh ingredients making it the ultimate side. It can be served either warm or cold and can be made ahead. Perfect for those warm summer lunches, barbecues, picnics or just your average weeknight – this would be the perfect complement to your Memorial Day get together! This recipe is vegetarian and done in less than 20 minutes.

Serves 6-8 as a side, serves 4 as a main | Vegetarian | Less than 20 minutes

  • 1 box orzo (1 lb), cooked and drained
  • 1/4 cup olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1/2 tsp salt
  • The juice on 1 large lemon or 1 1/2 small lemons
  • Black pepper
  • 1 cup cherry tomatoes, quartered
  • 1/3 red onion, diced small
  • 8 basil leaves, sliced thin

Mix the olive oil, balsamic vinegar, honey, salt, a few cracks of black pepper, and lemon juice together in a small bowl. Whisk to combine. Place the onion, tomatoes, and orzo in a large bowl. Pour the dressing on top and mix well. Sprinkle to fresh basil when ready to serve and stir.
