There is nothing more warming than an apple cinnamon muffin on a cool fall morning. These muffins are filled with healthy ingredients and are best served with a dollop of warm, homemade applesauce on top (which is so easy to make!). Here to make both your busy weekdays and lazy weekend mornings extra delicious, this vegan recipe is one of our favorites! We think you’ll like it too.

Makes 18 muffins and about 1 cup applesauce | vegan, vegetarian, kid-friendly | Less than 45 minutes
- For the muffins:
- 1 1/2 cups oat flour
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp kosher salt
- 2 tsp cinnamon
- 2 tbsp flax meal
- 7 tbsp water
- 1/2 cup melted coconut oil
- 1/2 cup plain, unsweetened almond milk, room temperature
- 1/2 cup coconut sugar
- 3 tbsp maple syrup
- 2 cups, peeled diced apples
- For the applesauce:
- 1 peeled apple, roughly cut into chunks
- 1 tbsp coconut oil
- 2 tsp honey (I use raw, unfiltered)
- 1/3 tsp salt
- 1/3 tsp cinnamon
Preheat your oven to 375 degrees F. In a small bowl, add the flax meal and water and let sit for 5 minutes. In a large bowl, whisk together the flours, baking powder, baking soda, salt and cinnamon. In a medium bowl, stir together the coconut sugar, coconut oil, almond milk, and maple syrup. Add the flax meal mixture when ready. (Note – if your oil mixture begins to solidify, simply place in the microwave for 20-30 seconds).
Pour the liquid ingredients into the dry ingredients and mix well. Fold in the apples. Scoop about 1/4 mixture into each muffin tin to yield 18 muffins. Bake for 18-20 minutes until a toothpick comes out clean.
While the muffins are baking, make the applesauce. Add all the ingredients to a small sauce pan and turn the heat to medium low. Let simmer, stirring occasionally, for about 5 minutes. When the apples are soft, remove from heat briefly and carefully mash with a potato masher or the back of a large spoon. Return to heat and cook for another 1-2 minutes.
To serve, split a warm apple cinnamon muffin in half and place about 1/2 tbsp applesauce on top of each half plus more for dipping if desired.
